In my mind online orders have always shipped before they got in store. I could be wrong but usually there's a few days of gap between the two.

Yes - this was also the case for me up until Spider-Man 2099. I got it shipped to me a few weeks after it was reportedly found in store.

That Infinity Saga Cap has hit Ontario but isn't in StockTrack and there aren't many sightings has me on edge. I hate the hunt.

Why hunt?

Just be patient.

All the other Infinity releases are basically everywhere now. Odins, Fat Thors and Quicksilvers all over the GTA.

There aren't too many parents wanting to spend $45 per figure on their kids, so it will ultimately really just be collectors buying these.

Yep, I came across full pegs of Fat Thor and his Pappy Odin earlier today. No one is really buying them. They'll be on clearance by the holidays.

Possibly. Other exclusives dried up really quick from Walmart. Happy to be patient but just don't want to spend secondary market money.

Odin and Thor aren't exclusives, and can be found anywhere. The Walmart Infinity Saga Captain America is an exclusive, obviously, and as such its availability is wholly dependent on how many and how widely distributed it is at the various walmarts. And while Walmart's Marvel exclusives tend to be a bit more available than its Star Wars Black Series exclusives, it's not something I'd sleep on.
